Zucchini Fritter with Avocado Dill Dip
This is an amazing snack that you’ll take with you on picnics, dinners or anywhere you go! This is the amazing recipe!
Fritter Ingredients:
- ¼ of a cup of fresh oregano
- 1 tablespoon of lemon zest
- ¼ of a cup of fresh basil
- 1 large or 2 small zucchini
- ¼ of a cup of gluten free flour
- ¼ of a teaspoon of onion powder
- 1 teaspoon of salt
- 2 organic eggs or ‘Flax Egg’
- 1 peeled and minced garlic clove
- ¼ of a teaspoon of pepper
Dip Ingredients:
- Avocado dip base
- ½ a cup of finely chopped dill
Instructions:
The first thing you should do is to grate the zucchini. Put them in a colander. Put ½ a teaspoon of salt over them. Let it stay like that for 10 minutes. After that, put the zucchini on a kitchen towel. It should absorb all the moisture. After that, transfer them in a large bowl. Combine the garlic, salt, lemon zest, onion powder, oregano, basil, egg, and pepper. Then, put the flour slowly. There shouldn’t be any lumps.
Heat 2 tablespoons of coconut or olive oil on medium heat. It should be very warm. The zucchini should sizzle when they’re inside. Form fritters inside. They should be several inches apart.
Cook them until they obtain golden color. It should take about 2 or 3 minutes. You should turn them from time to time. Cook them on the other side well, too. Put them on a plate. If you need more oil, you can add.
Notes:
You can also add some finely chopped kale or ½ a cup of spinach into your recipe. It will taste even better and more delicious!
